3 cups of boiling water
1 cup of whole grain rice
1/2 cup of finely chopped onion

1 tablespoon of fine herbs
1 teaspoon of salt
50g of dried tomato cut into pieces
3 artichoke hearts cut into pieces
3 slices of canned palmito cut into rounds
2 medium-sized balls of mozzarella cheese cut into pieces
1 pinch of black pepper in a pod

Heat the olive oil over high heat and fry the onion with salt for 5 minutes
Add the rice and stir
Pour in the boiling water and reduce the heat to low
Cover and cook without stirring for 35 minutes or until the rice is tender
In a pan, heat the butter
Add the tomato, mozzarella, palmito, artichoke, and herbs
Stir for 1 minute
Add the black pepper and mix
Pour over the rice, stir, and serve.
