3 or 4 green peppers
2 tablespoons of olive oil
1 cup cooked soybeans (see basic recipe)
1 small onion finely chopped
1 cup cooked rice
1 cup beef or chicken broth, or water
3/4 cup grated provolone cheese

Preheat the oven to moderate temperature (170°F)
Cut the peppers in half, remove seeds and membranes
Cook them in boiling water for 5 minutes and drain well
Arrange them in a baking dish so that one pepper leans against another
Brush with 2 tablespoons of olive oil
Mince soybeans, mix with onion and rice
Add grated provolone cheese to the soybean mixture and season with salt to taste
Stuff the pepper halves and place the dish in the oven, around the peppers, without covering them
Bake for 30 minutes, basting once with the roasting pan's liquid
Remove from the oven, sprinkle with Parmesan cheese, and return to the oven for an additional 15 minutes
Serve 4-6 portions.
