2.5 lbs of sweet potatoes
1 cup of breadcrumbs from day-old bread
1 cup of milk
melted butter or margarine
3 eggs
1 tablespoon of salt
4 egg whites

Wash and peel the sweet potatoes, then cut them into pieces
Cover with boiling water slightly seasoned with salt and cook for 20 minutes or until tender
Drain and pass through a blender
Mix the breadcrumbs with milk; add 3 tablespoons of melted butter or margarine and mix well
Beat the eggs and add to the milk mixture
Season with salt
Add the sweet potatoes
Beat the egg whites until fluffy
Grease a 2-liter baking dish
Add the egg whites to the sweet potato mixture and pour into the prepared baking dish
Bake in a moderate oven for 30-40 minutes, or until the soufflé has risen and lightly browned
Remove and top with 1/2 cup of melted butter or margarine; serve immediately
