Cook the rice in plenty of boiling water with salt, for 50 minutes, until the grains are al dente
Drain, rinse and reserve
Combine the onion, 50ml of water, zest from 1 lemon, and lemon juice in a saucepan
Let it simmer until a thick syrup forms, add the raisins and stir
Pour the syrup over the rice, mix well and let it cool before serving.
