4 or 5 finely chopped onions

1/3 cup of chopped scallions
3 cups of chicken broth
1 1/2 cups of uncooked rice
salt and black pepper to taste

Sauté the onion in butter or margarine for 5-10 minutes, until soft
Add the remaining ingredients, stir well, and let it simmer
Reduce heat, cover, and cook on low for about 20 minutes
Serve six portions.
