6 medium sweet potatoes

Boil the sweet potatoes in salted water until they're al dente, then drain them
Drain excess water
Using a small knife, carefully carve out the centers of each sweet potato vertically
Place half a slice of bacon, rolled up, into each cavity
Arrange the sweet potatoes in a baking dish, drizzle with olive oil, and season with thyme, salt, and pepper
Bake in a preheated oven at 220°C until golden brown.
