In a large saucepan, melt the butter over high heat
Add the onion and cook until caramelized
Add the rice and stir-fry for 1 minute
Add the milk and sweet potato, and bring to a boil
Reduce the heat and cover
Simmer for about 10 minutes, stirring occasionally, until the rice is tender (add water as needed)
Add the parsley and serve
