8 thin slices of tender or mellow beef
Salt and black pepper to taste
100 g of fresh bacon
One onion
50 g of sausage, type lion or 3 sausages, casings removed and chopped
or cooked ham, chopped
2 tablespoons of chopped parsley
4 tablespoons of chopped green scallion
Flour
1 1/2 cups of beef broth
8 thin slices of tender or mellow beef

Gently beat the meat
Season with salt and black pepper
Cut the bacon and onion into cubes
Place two-thirds of the bacon in a skillet
Add the onion and let it brown
Remove with a spatula and let it drain on paper towels
Reserve the fat from the skillet
Chop the sausage and mix with the raw bacon, fried bacon, and half the parsley and scallion
Place over the beef slices, roll, and tie with kitchen string or toothpicks
Dust lightly with flour
Fry in the reserved bacon fat until browned on all sides
Add the remaining parsley and scallion
Fry for a few more minutes
Add the broth and simmer for 30 minutes over low heat
Season the sauce if necessary with salt and black pepper to taste
Serve immediately
