Cut off the fine tip end of the roast
Open it up to the middle, lengthwise, like a large steak, without separating
Season with salt and pepper
Process the herbs along with the pork belly slices and a pinch of salt
Spread over the meat, fold it, joining the ends, and close, securing with a thick string
Place in a baking dish, drizzle with olive oil, and arrange the potatoes around it
Put in a hot oven (400°F), preheated, for 30 minutes
Flip the roast and bake for another 20 minutes
