1 tablespoon of butter

1/2 cup of semolina
2 eggs, separated
1/2 teaspoon of salt
A pinch of pepper

Mix the butter and milk; gradually add the semolina, stirring well
Place over low heat (or use a double boiler) and stir until thickened and smooth
Let cool
Add the egg yolks, salt, and pepper; fold in the beaten egg whites
Form into balls about the size of marble and drop into boiling chicken or beef broth
Cook for 10 minutes
These fritters will swell and float to the surface
Yield: approximately 40 fritters
