600 g of cooked and mashed sweet potato

3 tablespoons of grated cheddar cheese
2 egg whites whipped to a snow-like consistency
2 cans of tuna in oil
2 tomatoes, peeled and seeded, cut into cubes
Salt and pepper to taste
Salsa or chopped fresh herbs to taste (optional)

Mix the sweet potato well with the mayonnaise, two tablespoons of grated cheese, and whipped egg whites
Mix the tuna, tomato, salt, pepper, and salsa (if using); set aside

Preheat the oven to 400°F (200°C)
In a greased baking dish, place half of the sweet potato mixture, followed by the tuna mixture, and top with the remaining sweet potato
Sprinkle the rest of the grated cheese on top and bake until golden brown
