4 cups smoked turkey breast, chopped (500g)
1/2 cup finely chopped fresh parsley
4 slices of white bread, torn into pieces
2 eggs
1/3 cup finely chopped onion
1 tablespoon mustard
1 pinch ground cloves
2 tablespoons freshly squeezed orange juice
2 tablespoons honey
For the glaze:
1 egg
1 tablespoon mustard
1/2 cup heavy cream
1/4 cup vinegar
1 teaspoon salt

For the glaze:

1/2 cup heavy cream
1/4 cup vinegar
1 teaspoon salt
Preheat oven to moderate temperature (180°C)
In a bowl, mix together the turkey breast, parsley, bread, eggs, onion, and mustard
Press mixture into an English muffin tin, greased
Pour onto a baking sheet
Roast for 40 minutes
Mix together the cloves, orange juice, and honey
Brush the turkey with this mixture and roast for another 15 minutes
Remove from oven and let cool
Wrap in aluminum foil and refrigerate for 2 hours
Prepare glaze: blend all ingredients in a blender until smooth
Cut the roasted turkey into slices and top with the glaze
Serve in 12 slices
Note: This recipe can also be made with cooked or smoked ham.
