For the sauce
1 tablespoon olive oil
2 minced garlic cloves
1 medium onion (100g), finely chopped
4 medium tomatoes (480g), seedless, diced
1 tablespoon chopped fresh coriander
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup water (120ml)
For the fish
4 tuna fillets (750g)
1/2 teaspoon salt
1/4 teaspoon black pepper

Heat a grill or skillet over low heat
Prepare the sauce: in a medium pan, heat the olive oil over medium heat
Add the garlic and onion and sauté until they start to brown
Add the tomato, coriander, salt, and black pepper and simmer
Add the water, reduce heat, cover the pan, and cook until the tomato is tender (about 15 minutes)
Prepare the fish: while this is cooking, in a medium bowl, season the fillets with salt and black pepper
Brush the hot grill or skillet with olive oil and grill the fillets, two at a time, until they are cooked through (about 4 minutes per side)
Place the sauce on a plate and top with the tuna
Serve immediately
