In a large skillet, heat the olive oil over high heat
Sauté the onion, garlic, and parsley until the herbs are wilted
When the herbs have darkened slightly (about 5 minutes), add the tuna fillets and reduce the heat
Cook on both sides until cooked through
Add the wine, increase the heat, and cook until the liquid has almost completely evaporated (about 5 minutes)
Add the flour dissolved in water, the salt, and stir well
Cover the skillet, reduce the heat, and cook until the tuna is flaky and easily broken with a fork (about 10 minutes)
Serve immediately, garnished with Italian bread
