In a microwave-safe bowl, combine the sugar and water and heat in high for 4 minutes
Mix and cook for another 4 minutes or until it forms a syrupy consistency
Add the beaten eggs to the coconut milk, mix, and cook on medium for 1 minute more
Stir and cook on medium for 1 minute more
Check and, if necessary, stir and cook for an additional 30 seconds or until it reaches a creamy consistency
Be careful not to overcook, as this will cause the mixture to curdle
