Leave the cod to soak for 24 hours, changing the water three times
Before preparing it, blanch the cod and gently pry open the flakes without tearing them
Prepare a sauce with olive oil, annatto extract, garlic, onion, chopped tomato, and parsley
Add the cod and when it starts to simmer, add the sliced plantain bananas and coconut milk
Let it reboil once more
