Boil the potatoes with their skins on
Soak the cod in cold water overnight, then flake it into pieces and remove any bones or skin
Heat the olive oil in a pan over medium heat
Add the onions, garlic, and rosemary, and cook until the onions are lightly browned
Add the cod and potatoes to the pan, and cook for a few minutes
Remove from heat and transfer everything to a large ceramic dish
Put it in the oven at 350°F (180°C) for about 15 minutes
Serve garnished with sliced hard-boiled eggs, olives, and chopped parsley.
