Soak the cod in water for 48 hours, changing the water occasionally
Preheat a non-stick skillet with some oil
Sear the cod fillets quickly on both sides over medium heat
Meanwhile, bring a pot of water to a boil
When boiling, add the cod and let it simmer again
Drain well
Cook the potatoes, slice them into rounds, and place them in a baking dish
Place the cod on top of the potatoes
Sprinkle with black pepper
Fry the onion in olive oil
Remove with a slotted spoon and arrange over the cod and potatoes
Dress with boiling olive oil
Garnish with black olives, if desired
