Soak the cod fillets in water for 48 hours, changing the water occasionally
Heat a non-stick skillet with some olive oil over medium heat
Quickly grill the cod fillets on both sides, then set them aside
While that's cooking, bring a large pot of salted water to a boil
When it reaches a rolling boil, add the cod fillets and let it simmer again
Drain well and set aside
Bake the potatoes in a preheated oven until tender, then slice into rounds
Place the potato slices in a serving dish
Lay the grilled cod fillets on top of the potatoes
Dust with black pepper to taste
Fry the onions in olive oil until caramelized
Remove from heat and spoon over the cod and potatoes
Drizzle with hot olive oil, if desired
Garnish with black olives, if desired
