Cod
2 pieces of cod fillets
500g small potatoes
2 onions
2 cloves of garlic
200ml olive oil
Salt and black pepper to taste
2 egg whites
Sauce
2 tablespoons wheat flour
400ml milk
2 egg yolks
200g cream or heavy cream
Salt, black pepper, and nutmeg
1 sprig of rosemary

Prepare the fish
Cook the cod, removing bones and skin
Cut it into flakes
Sauté the onions, garlic, and rosemary in olive oil, seasoning with salt and pepper
Stir constantly until golden brown
Add the cod, letting it fry for a bit
Separately, cut the potatoes into sticks and fry them lightly
Make the sauce and combine it with the fish and potatoes
Mix everything together
Put the mixture in a greased baking dish
Sprinkle the egg whites over the top, dusting with powdered sugar
Bake in a medium oven until golden brown
Serve with rice and salad
Prepare the sauce
Whisk flour into milk
Add black pepper, salt, nutmeg, and rosemary, and bring to a boil
When thickened, add cream or heavy cream and egg yolks
Do not stop stirring.
