1 1/2 kg of cooked and peeled potatoes

1/3 cup of lemon juice
1/4 cup of finely chopped onion

1 kg of sweet potato
3 ripe bananas
1 kg of fresh cod fillets or post-cod pieces cut in half and without bones
Wheat flour

3 large red bell peppers without seeds and skin, cut into thin strips
1/3 cup of white wine vinegar
1/2 xicara of olive oil

6 slices of fresh Minas cheese

Squeeze the potatoes well and mash them
Mix the olive oil, lemon juice, chopped onion, salt, and black pepper
Combine with the potatoes and beat well
Pile the mashed potato in the middle of a large round dish
Hold it warm
Bake the sweet potato until cooked through
Cook the banana (with peel) in boiling water for about 20 minutes
Squeeze out the banana
Cut the potatoes into slices
Peel and cut the bananas lengthwise, then cut each half in half
Cut the cod fillets into pieces
Dust with wheat flour
Season with salt and black pepper and fry in olive oil for about 4 minutes, or until golden brown
Squeeze out and keep warm
Soak the onions and bell peppers in boiling water for a few minutes
Squeeze out and add to a saucepan with white wine vinegar, olive oil, salt, and black pepper to taste
Let it simmer slowly and cook covered for about 3 minutes
Remove from heat
Arrange the cod fillets, sweet potato, and banana around the potatoes
Pour the pepper sauce on top
Finally, garnish with cheese and black olives if desired
