4 salted cod fillets
1 chopped onion
500g gray shrimp
1 clove of garlic
100g bacon
1/2 teaspoon of thyme (optional)
4 cups of chicken broth
1/3 cup of oil
1/3 cup of heavy cream
Salt and black pepper to taste

Soak the gray shrimp in cold water until the skin comes off
Sauté the garlic, onion, bacon, and thyme
Add the gray shrimp and half of the hot chicken broth
Let it simmer and add the remaining broth slowly until the gray shrimp is tender
Blend the mixture in a blender
Return the sauce to the pan over low heat and stir in the heavy cream
Simmer for 15 minutes
Cod: fry the fish in a skillet with oil
Place the purée in the center of a plate, top it with the cod, and (optional) drizzle with pesto sauce (recipe available on the magazine's website)
