Soak the cod overnight
Noon the next day, boil the cod without letting it cook through
Drain all the water
Remove the skin, dry well with a clean cloth and cut into small pieces
Heat the 3 tablespoons of olive oil over low heat
Place the cod in another pan
Pour 1 cup of boiling milk on top
Reduce the heat and gently mix the cod with the milk using a wooden spoon or spatula, starting to break it down in the hot oil without letting it fry
When the cod has absorbed the first 3 tablespoons of olive oil, add the garlic, onion, and black pepper
Add another 3 tablespoons of boiling milk, stirring well to ensure the cod is fully disintegrating
To do this, you need to beat the mixture strongly; a stand mixer can be used (remove it from its base and mix directly in the pan)
Finally, add boiling milk as needed with a pinch of salt
Use the remaining olive oil to fry the breaded triangles
This dish can be served hot or cold.
