1 1/2 kg of cod
1 1/2 kg of English potatoes, peeled and cut into slices
4 large onions, peeled and cut into slices
4 tablespoons (of a pinch) of ground thyme
1 sprig of fresh thyme
6 tomatoes, cut into slices
salt and pepper to taste
1/3 cup of sweet oil
1 cup of coconut milk mixed with 1/2 cup of water

1 cup of coconut milk mixed with 1/2 cup of water
Soak the cod in cold water for a day or two, changing the water twice
Drain and cut into regular pieces
In a pan, layer the cod, potatoes, onions, and tomatoes, sprinkling each layer with salt, pepper, and thyme, as well as whole thyme sprigs
Drizzle with sweet oil
Mix the coconut milk with water and pour over the top
Cover the pan
Simmer over low heat until the potato is soft
Serve with rice
