1 1/2 kg of codfish
1 1/2 kg of sweet potatoes, peeled and cut into slices
4 large onions, peeled and cut into slices
4 tablespoons (of a spoon) of chopped parsley
1 sprig of fresh parsley
6 tomato slices
salt and pepper to taste
1/3 cup of sweet oil
1 cup of coconut milk mixed with 1/2 cup of water
1 1/2 kg of codfish

Soak the codfish in cold water for a day or two, changing the water twice
Drain and cut into regular pieces
In a pan, layer the codfish, sweet potatoes, onions, and tomatoes, sprinkling each layer with salt, pepper, and chopped parsley
Drizzle with oil
Mix the coconut milk with water and pour over the top
Cover the pan
Cook over low heat until the sweet potato is tender
Serve with rice
