3 kg of codfish
8 medium onions, peeled
1 kg of sweet potatoes, peeled
8 eggs
2 bunches of scallions, chopped
salt and pepper to taste
olive oil to taste

Soak the codfish in water for 24 hours
Change the water several times
In a large pot, place the sweet potatoes with enough water to cook them
Add the onions and eggs
When the sweet potatoes are almost cooked, remove the eggs
Add the codfish, salt, and pepper
At the side, place the scallion leaves without stems in another pot, with water and some of the cooking liquid from the codfish
Cook the scallions, then drain
Drain the codfish
Place all ingredients in a baking dish, making sure to peel the eggs before
Serve 8 to 10 portions
Serve with olive oil, or with a sauce made in the following way:
1/2 cup of olive oil
3 cloves of garlic, minced
2 tablespoons of chopped fresh parsley
1 cup of the cooking liquid from the codfish
Mix all ingredients and place in a serving dish.
