Mix the sugar, cream of tartar, hot water, and vinegar in a pot
Aqueรงa (heat) without stirring until it forms a hard ball when dropped into cold water
Remove from heat, let sit for 1 minute
Pour into a greased dish
Cover with small pieces of butter or margarine
Let sit for 5 minutes, and as the edges start to firm up, lift them with greased hands, folding them in half (the soft part will move to the sides)
Let sit for another 5 minutes
Grease your hands well, pick up the candy and form a ball
Hold the ball in one hand and pull the candy with the other until you get a strip of 22 cm
Fold again and pull, repeating this process several times with greased hands until the candy is almost cool
Cut into 4 pieces, pull each piece to get a thickness of 1 cm, and place on a greased dish
When all the strips are ready, cut them into small pieces with scissors
Dust with confectioner's sugar
Let sit for a night inside a container with confectioner's sugar
Remove and place in an airtight container to serve within 2 days
Serves about half a kilogram.
