Banana with Marshmallow Mousse

In a saucepan, warm 2 cups of passionfruit juice with the sugar

Let it simmer until it forms a syrup-like consistency

Beat the egg whites until stiff and, without stopping the mixer, slowly pour in the warm syrup

Continue beating until the mixture cools slightly. Reserve

Slice the bananas into rounds and add lime juice to prevent browning

Distribute in individual serving cups, drizzling a little of the remaining passionfruit juice on top

In succession, drizzle each banana slice with marshmallow mousse

Dust with cocoa powder and pulp from passionfruit

Refrigerate for half an hour and serve.
