For the sorbet

300 ml of milk
1 can of condensed milk
1 can of whipped cream

200 ml of orange juice
1 rind of orange peel, grated
1 dash of açúcar

Prepare the sorbet
Separate the egg whites from the yolks, placing them in separate containers
Beat the yolks with milk and 1 dash of mangee
Beat the egg whites until stiff and refrigerate
When the egg whites are frozen, add to the same bowl as the yolks all the ingredients, including mais 1 dash of mangee
Mix everything with a wooden spoon
It's essential that it be slow, so that the egg whites don't break down
Put the mixture in the freezer
When the mixture is almost frozen, remove it from the freezer and cut it into pieces
Beat in a portable mixer until it becomes creamy
The sorbet is ready
Prepare the banana
Remove the peel of the banana and cut it in half lengthwise. Reserve
Cook some açúcar with 1 dash of grated orange rind
When browned, add the orange juice and the banana
Cook for about 3 minutes
When the banana is cooked, flambé it with Cointreau
Allow it to cook for another 3 minutes
Then remove the banana from the molten sauce and place it in a dish
Cook for a bit longer until the point of syrupiness
Pour the syrup over the banana
Serve with a scoop of mangee sorbet.
