Preheat the oven to 250°C (hot)
Carefully wash the potatoes under running water with a vegetable brush
Place them in an oven-safe dish and bake until they're tender and the skin starts to crackle when touched
Remove from the oven, then give each potato a gentle 'mashing' with your hand wrapped in a cloth
In a large frying pan, heat the olive oil with the garlic
Add the potatoes gradually and fry both sides until golden brown
Remove the garlic before it burns
As you remove the potatoes from the oil, let them drain on paper towels
Season with salt to taste and serve hot
