3 large sweet potatoes, well washed (700g)

Preheat the oven to a hot temperature (220°C)
Line a baking dish, approximately 32 x 22 cm, with aluminum foil
Cut each sweet potato into 4 long pieces
Boil in boiling water for 10 minutes
Pierce each piece several times with a fork
In a shallow bowl or plate, mix the melted butter, Parmesan cheese, onion, and lemon juice
Add salt to taste
Dip each sweet potato piece into the mixture, coating it well
Place the sweet potatoes in the prepared baking dish and drizzle with any remaining sauce
Roast in the preheated oven at 200°C for about 25 minutes or until the sweet potatoes are tender
Let stand for 6-8 minutes.
