4 large sweet potatoes (about 1 kg) well washed and scrubbed
6 cloves of garlic, finely chopped

2 tablespoons of chopped fresh parsley
2 tablespoons of olive oil

Mix together the garlic, oregano, parsley, olive oil, salt, and black pepper in a small bowl
Cut the sweet potatoes into slices without cutting them all the way through
Spread a bit of the garlic mixture onto each sweet potato slice
Wrap individually in plastic wrap, microwave on high for 10 minutes
Let it rest for 5 minutes before unwrapping
If cooking in a conventional oven, wrap in aluminum foil and bake at 200°C for 60 minutes or until the sweet potatoes are roasted
Arrange 1 sweet potato on each plate, gently pressing to "open" the sweet potato
Serve 4 portions.
