Cook the black beans in a pressure cooker for about 20 minutes, or until they are tender but still firm
Drain the water and season with salt and black pepper
Let it cool in an ice bath and when completely cold, add the yellow and red peppers, parsley, and oregano
Dress with olive oil and white vinegar, adjusting the seasoning as needed
Refrigerate until serving time.
