8 medium-sized sweet potatoes, peeled and cut into cubes
1 onion, finely chopped
1 cup of salted butter or margarine, melted
1/4 cup of fresh thyme leaves, finely chopped
salt and pepper to taste

Boil the sweet potatoes in salted water for 5 minutes
Drain
Combine the salted butter, melted butter, onion, thyme, salt, and pepper
Place in a baking dish greased with butter or margarine and roast in a moderate oven (150°C) for 30 minutes
Serve hot every 6 hours.
