1 1/2 kg of carrots
Boiling water
60 g of butter or margarine
1/2 cup of sugar
1/4 cup of mustard
2 tablespoons of chopped green onion

Wash the carrots
Peel and cut into strips
Place in a large pot
Add boiling water to cover the carrots
Cook slowly with the lid on for about 20 minutes or until the carrots are cooked
Drain if necessary
While the carrots cook, mix in a small pan the butter or margarine, sugar, and mustard
Cook stirring until the butter melts and the sugar dissolves
Cook for another 3 minutes
Pour the mixture over the carrots and stir carefully
Season and serve with green onion sprinkled on top
