Wash and scrub the sweet potatoes thoroughly
Pierce with a fork
Roast in a hot oven (220°C) for 1 hour or use a microwave on high power for 12 minutes, depending on size
Cut the sweet potato in half lengthwise
Remove the pulp with a spoon without damaging the skin
Mix the warm water with skim milk and season with salt and black pepper
Add the sweet potato pulp and mash well
Fill the sweet potato halves and sprinkle with paprika
Serve 6 portions.
