1 slice of bread cut into small cubes

Boil the potatoes until they're tender
Peel and pass through a ricer onto a tray
Let it rest overnight, uncovered
Mix together the flour, eggs, and salt; mix well
Sauté the onion in butter
Add the bread cubes and let them brown slightly
Hold a spoonful of the potato mixture with your hands and place some bread cubes on top
Form into a ball covering the bread cubes
Repeat this process until all the potatoes have been used
Bring a large amount of salted water to a boil in a pot
Drop in the potato fritters
Let them simmer for 20 minutes
Drain and serve immediately
Yield: 8-10 potato fritters
