2 tablespoons of butter or margarine
1 medium onion, chopped
250g of beef (mole cut or chuck), cut into strips
2 medium carrots, peeled and grated, then cut into thin strips
300g of green beans, trimmed and cut into 1cm pieces
to taste: salt and black pepper
to taste: thyme

Melt the butter or margarine
Add the chopped onion and sauté for a few minutes
Add the beef strips and cook for 5 minutes, or until browned
Add the carrots and green beans
Simmer, covered, over low heat, stirring occasionally, until the green beans and carrots are cooked but still crisp
Season to taste with salt, black pepper, and thyme
Stir well
Serve with rice
