In a large pot, combine the sweet potatoes, three liters of water, and bring to a boil for 20 minutes or until the sweet potatoes are soft

Drain and pass through a vegetable strainer. Reserve

In a medium-sized pot, combine the water, butter, and bring to a simmer
Add the flour in one go, stirring constantly, until a dough forms that can be detached from the bottom of the pot

Remove from heat and let rest for three minutes
Add the eggs one at a time, stirring vigorously after each addition
Add the sweet potatoes and season with salt and pepper
Mix well until you achieve a homogeneous mass

In a pan, heat the oil over medium heat
Fry in batches of one tablespoon (about 1/4 cup) of the dough at a time, until golden brown
Drain on paper towels and serve.
