Clean the sardines by removing the dorsal fin. Reserve
Mash the olives and capers together
Mix with breadcrumbs, parsley, olive oil, and garlic
Season
Arrange the sardines in a baking dish coated with olive oil, skin side down
Place some of the breadcrumb mixture on top of each sardine
Add vinegar and 1/3 cup of water to the bottom of the baking dish
Baste with a little more olive oil and bake in a moderate oven (180°C) for 20 minutes
Serve immediately
