Cut the tuna into small pieces, season with salt and shape it into hamburger patties (around 230g)

Brush each hamburger patty with oil and grill to desired doneness

In a refractory or stainless steel bowl, combine wine and egg yolks and place in a water bath, whisking with a manual whisk until slightly thickened

Remove from the water bath and gradually add the melted butter and lemon juice while whisking.
