2 lingcod or cod fillets

Honey Mustard Sauce:
2 whole eggs and 1 egg yolk
1 tablespoon honey
2 tablespoons apple cider vinegar
2 tablespoons olive oil
1 tablespoon tomato extract

Cook the fillets in tempered water with salt until they are soft but not falling apart
Cook the shrimp as well, previously seasoned with lemon juice
Pound the shrimp and divide it between the two cooked fillets
Roll up the fillets and keep them warm
Prepare the sauce by beating the eggs and egg yolk
Add the honey and tomato extract and beat well
Slowly add the apple cider vinegar and olive oil, beating continuously
Cook in a water bath until it thickens slightly, stirring constantly
Serve this sauce over the fish.
