Line a mold with aluminum foil and, above it, spread 2 kg of coarse salt uniformly
Place the fish in the mold and cover with the remaining salt
Put it in a moderate oven (180°C), preheated, for an hour
Reduce the oven temperature to 100°C and bake for another 30 minutes
Transfer the fish to a tray and, before serving, remove some of the salt layer
Yields 6 servings
If you prefer freshwater fish, substitute red fish with trout.
