Choose sweet potatoes with a nice shape, large size. Scrub them well. Dry and lightly brush with butter or margarine. Pierce the sweet potatoes with a fork. Place in the oven and roast for about 1 hour, or until they're tender. Cut them in half and remove the pulp. Add the following ingredients (for 6 sweet potatoes):
2 tablespoons of butter or margarine
1 teaspoon of salt
1/4 cup of warm milk
1/2 cup of chopped fresh parsley

Mix the pulp very well with the above ingredients and place it back into the sweet potato skins
Brush with melted butter, sprinkle with a little cheese and bake in a moderate oven for 10 minutes.
