1 large sweet potato, cooked with skin

2 tablespoons sliced mushrooms
Salt and parmesan cheese to taste

Cut the sweet potato in half and open up the sides
Add the olive oil, cream cheese, mushrooms, salt, and finally top with parmesan cheese
Place in the oven to roast
Serve with green salad and dried tomatoes
