1 egg
2 tablespoons of grated cheese
1 diced carrot
1 chopped leek
3 tablespoons of chopped parsley
1 pinch of nutmeg
1 pinch of black pepper
3 tablespoons of butter
4 tablespoons of wheat flour
Salt to taste

Juice of 4 oranges
1 tablespoon of curry powder
2 tablespoons of butter
Salt and chopped parsley to taste
Pancakes

Let the bean soak overnight
Drain and cook with water until tender
Batter in a blender until it forms a coarse paste, without over-processing the grains
Transfer to a bowl, add the egg, cheese, carrot, leek, parsley, salt, black pepper, and nutmeg, and mix well
Mold thick pancakes
Place the pancakes on a baking sheet lined with parchment paper and bake in a medium oven until firm
Baste the slices with butter, then coat with flour
Make the mole: Mix the juice with curry powder and simmer until it reduces by half
Combine the melted butter and salt, whisk well
Assemble the slices over the pancakes and serve with the warm mole.
