1 medium pumpkin
1 cooked chicken breast, cut into cubes
1 package of cream cheese like catupiry
1 box of heavy cream
2 tablespoons of oil
1 medium onion, finely chopped
1 medium tomato, finely chopped
Salt and pepper to taste

Make a circle on top of the pumpkin and remove the pulp, leaving a 1 cm border
Brush it outside with oil to prevent drying out
Wrap in aluminum foil and bake for 45 minutes or until the pumpkin is soft
In a pan, heat the oil and sauté the onion, tomato, and chicken
Season with salt and pepper
Add heavy cream and simmer over low heat, stirring for 5 minutes
Remove the pumpkin from the oven, spread the cream cheese, add the chicken on top, and sprinkle with cheddar cheese
Bake for another 15 minutes to gratinate
