Assemble the sweet potatoes in a baking dish
Set aside
Melt 3 tablespoons of butter and mix with flour
Add milk gradually, stirring until thickened
Add cheese and let it melt
Season with salt and pepper, spreading over the sweet potatoes
Melt the remaining butter and mix with breadcrumbs
Spread over the sweet potatoes and bake until golden brown
Douse every 4 minutes.
