4 medium-sized sweet potatoes (about 1/2 kg)
2 tablespoons of fresh thyme
1/4 cup of olive oil
salt and pepper to taste
1 cup of dry white wine

Chop the thyme finely
Place it in a small bowl
Add the olive oil and season with salt and pepper to taste
Mix well with a wooden spoon
Preheat the oven to hot temperature (200°C)
Wash the sweet potatoes, but do not peel them
Cut the sweet potatoes in half lengthwise
Pierce the cut side several times with a fork
Arrange the slices in a baking dish, with the cut side facing up
Brush each quarter of sweet potato with a little olive oil and thyme
Pour the wine around the sweet potatoes in the baking dish
Bake for about 50 minutes
