Ace the oven
Purpose a baking dish with a capacity of 2 liters
In a pan, melt the 2 tablespoons of butter or margarine
Cut the ham into small pieces
Add the onion and cook slowly until it turns lightly golden
Dust with flour and pepper, then stir for a few minutes
Remove from heat
Combine the milk all at once, stir well to mix, and bring to moderate heat
Cook, stirring constantly, until it comes to a boil
Peel the sweet potatoes and cut them into thin slices
Place in the prepared baking dish
Add the stuffed olives to the sauce and spread over the sweet potatoes, gently mixing with a fork
Mix bread crumb and melted butter or margarine, then sprinkle over everything
Bake in a moderate oven for 1 hour and 30 minutes, or until the sweet potatoes are tender and have absorbed the sauce
Serve in 6 portions
